Kitayama stones originate from the northern Kyoto region around Mt. Kozaki and have long been appreciated for their approachable, user-friendly character. Unlike harder, edge-focused stones, Kitayama stones are known for their softer structure and smooth abrasive action, making them particularly versatile across different blade types and steels.

The slightly soft nature of this stone allows it to develop slurry easily, resulting in a creamy, forgiving sharpening feel. This behavior supports even contact across the blade surface and promotes a uniform kasumi finish, rather than aggressive edge definition. For this reason, Kitayama stones have traditionally been favored for general refinement and surface work where balance and consistency are desired.

Because of their adaptability, Kitayama stones are often regarded as excellent all-round Awasedo, suitable for both experienced sharpeners and those newer to natural stones.
